Banoffee Pie

Britain's favourite no-bake dessert: biscuit base, toffee, banana and cream.

Ingredients
  

  • 250 g digestive biscuits crushed
  • 125 g butter melted
  • 397 g condensed milk tin, or ready-made dulce de leche
  • 4 ripe bananas sliced
  • 300 ml double cream
  • 1 tbsp icing sugar optional
  • dark chocolate grated or shaved, to finish
  • 1 tsp lemon juice to stop the bananas browning

Method
 

  1. Mix the crushed biscuits with melted butter. Press into a 23cm tin. Chill for at least 30 minutes.
  2. Gently heat the condensed milk in a pan, stirring constantly, for 10-15 minutes until thick and golden, or use ready-made dulce de leche.
  3. Pour the toffee over the base and chill until firm, at least an hour. Toss the banana slices in lemon juice and arrange over the toffee.
  4. Whip the cream to soft peaks and spoon over the bananas. Finish with grated dark chocolate.
