Carrot and Coriander Soup

A simple, velvety soup made with sweet carrots, potato and fresh coriander, ready in half an hour.

Ingredients
  

  • 1 tbsp olive oil or butter
  • 1 large onion chopped
  • 2 tsp ground coriander
  • 500 g carrots peeled and sliced
  • 1 medium potato about 200 g, peeled and diced
  • 1 litre vegetable stock
  • 30 g fresh coriander leaves and stalks chopped
  • ½ lemon juice only
  • salt and black pepper

Method
 

  1. Cook the onion in the oil over a gentle heat for 8 minutes until soft.
  2. Stir in the ground coriander and cook for a minute.
  3. Add the carrots and potato, stir, then pour in the stock.
  4. Bring to the boil, cover and simmer for 20 to 25 minutes until the carrots are tender.
  5. Add most of the fresh coriander and blend until smooth.
  6. Stir in the lemon juice, season to taste and serve topped with the remaining coriander.
