Celery Soup

A fresh, velvety blended soup of celery, onion and potato - subtly savoury and much more interesting than celery's reputation suggests.

Ingredients
  

  • 1 whole head of celery trimmed and sliced
  • 2 tbsp butter
  • 1 onion chopped
  • 1 medium potato peeled and diced
  • 1 litre vegetable or chicken stock
  • 100 ml single cream optional
  • Salt and white pepper to taste
  • A few celery leaves to garnish

Method
 

  1. Melt the butter in a large saucepan over medium heat. Add the celery and onion and cook for 8-10 minutes, stirring occasionally, until softened but not browned.
  2. Stir in the diced potato and pour in the stock. Bring to a simmer.
  3. Reduce the heat and cook gently for 20-25 minutes, until the celery and potato are completely tender.
  4. Blend the soup until smooth. Stir in the cream, if using, and season to taste with salt and white pepper.
