Slow Cooker Beef Brisket

Fall-apart tender beef brisket, slow-braised with onions and carrots.

Ingredients
  

  • 1.75 kg beef brisket trimmed, thin layer of fat left on
  • 2 tbsp vegetable oil
  • 2 onions sliced
  • 3 carrots chunked
  • 3 garlic cloves crushed
  • 400 ml beef stock
  • 2 tbsp tomato purée
  • 1 tbsp Worcestershire sauce
  • 1 tbsp brown sugar
  • 2 bay leaves
  • 1 tsp smoked paprika optional

Method
 

  1. Season generously and sear on all sides in hot oil until well browned.
  2. Layer the sliced onions, carrots and garlic in the slow cooker. Place the seared brisket on top.
  3. Mix the stock, tomato purée, Worcestershire sauce, brown sugar, paprika and bay leaves, and pour over the brisket.
  4. Cover and cook on low for 8-10 hours until completely tender and shreds easily.
  5. Rest for 10-15 minutes before slicing against the grain or shredding. Skim the sauce and serve alongside.
