Slow Cooker Beef Stew

A rich, fuss-free beef stew made with cheap braising cuts in the slow cooker.

Ingredients
  

  • 1 kg braising steak cut into large chunks
  • 2 tbsp plain flour seasoned
  • 2 tbsp vegetable oil
  • 1 large onion chopped
  • 3 carrots chopped
  • 2 celery sticks chopped
  • 3 potatoes peeled and chopped
  • 2 garlic cloves crushed
  • 500 ml beef stock
  • 2 tbsp tomato purée
  • 1 tbsp Worcestershire sauce
  • 2 bay leaves
  • 1 tsp dried thyme

Method
 

  1. Toss the beef in seasoned flour and brown in batches in hot oil.
  2. Transfer the beef to the slow cooker with the onion, carrots, celery, potatoes and garlic. Add the stock, tomato purée, Worcestershire sauce, bay leaves and thyme.
  3. Cover and cook on low for 7-8 hours, or high for 4-5 hours, until the beef is completely tender.
  4. If the gravy is thin, stir in a cornflour and water paste and cook uncovered on high for 15-20 minutes.
