Toffee Apple Recipe: Classic Hard Toffee Apples for Bonfire Night

Toffee Apples

Classic British hard toffee apples with a crisp, glossy sugar coating, ideal for Bonfire Night and Halloween.

Servings: 6 apples

Ingredients
  

  • 6 small apples firm and tart
  • 6 lolly sticks or wooden skewers
  • 300 g caster sugar
  • 2 tbsp golden syrup
  • 100 ml water
  • 1 tbsp white wine vinegar or lemon juice
  • red food colouring optional

Method
 

  1. Wash the apples in hot water, dry thoroughly and push a stick into each stalk end.
  2. Line a baking tray with lightly oiled baking parchment.
  3. Heat the sugar, golden syrup, water and vinegar gently, stirring until the sugar dissolves.
  4. Stop stirring and boil until the thermometer reaches 150°C. Remove from the heat and stir in food colouring if using.
  5. Tilt the pan and swirl each apple through the toffee, letting the excess drip off.
  6. Place on the tray and leave to set for about 30 minutes.
